Cerro San Luis Micromill is a family-run business led by siblings Alexander and Magali Delgado, along with their partners. They manage two coffee farms and a small milling operation in Grecia, located in the West Valley. To improve quality and stay competitive, they have diversified their coffee offerings planting Caturra, Red and Orange Bourbon, SL-28, Catuai, Villa Sarchi, and Maragogype.
The family’s farms are located next to each other, but each plot has its own unique name to ensure proper lot separation. Their milling facility is conveniently situated at their home, just a few miles from the farms, which helps streamline their operations. After harvesting, the coffee cherries are brought directly to their residence, where they utilize various processing techniques, including washed, honey, and natural methods.
Following Costa Rican milling traditions, the type of honey used is based on the amount of mucilage left on the coffee after depulping. This careful processing results in coffee that boasts a delightful sweetness and a rich, wine-like acidity, making it especially enjoyable when brewed as a pour-over.
